Chicken rice with oyster sauce

Ingredients :

3 cups of basmathi rice, cleaned and soaked
for 30 minutes and drained
1 pandan leaf, knoted
1/4 tea spoon of sesame oil
4 pieces of fresh black fungus @ cloud ear
fungus, slice small
5 pieces of button mushroom, each cut half
1 inch of ginger, mildly pounded
1 piece of chicken (chest), cutlong
2½ big spoon of Jalen dark oyster sauce
1 spoon of Jalen dark soy sauce
2 spoon of Jalen sweet soy sauce
¼ pepper poweder
(mixed well and marinated for 25 minutes)
2 cloves of garlic, finely chopped
4 onions. sliced
4½ cups of chicken bone broth
salt (if needed)

Side Ingredients :

Grilled honey chicken ( ingredients below)
slices of scallion
slices of tomato
thymes
lettuce
fried onions
red chilli (seed removed and diced)

How to make :

1. Heat the oil and pan. Then, stir-fry onions, garlic and ginger. Add in marinated chicken along with its marinating ingredients.
2. Mix well and wait until chicken is cooked. Add pepper powder and basmathi rice, mix well for 30 seconds. Shift into a rice cooker. Pour water and add pandan leaf, Add salt if needed.
3. Let the rice cook until it is dry enough. Add sesame oil and ligthen rice using a pair of chopsticks. Let sit for a while and serve with letuce, thyme and tomato. Sprinkle some fried onion, scallion, red chilli and serve with honey chicken.

Grilled honey chicken
Ingredients :

6-8 pieces of chicken wing, cleaned and drained
3 cloves of garlic, mildly pounded
1 teaspoon of tumeric powder
½ teaspoon of finely grinded black pepper
1 ½ inch ginger mildly pounded
2 spoon of Jalen dark soy sauce

How to make :

1. Mix the chicken wing with tumeric powder, grinded black pepper, garlic, ginger, lemongrass and dark soy sauce. Add salt if if needed. Marinate at least for 2 hours or overnight in refrigerator.
2. Grill the chicken in a non-stick pan or an oven (if used, at temperature 200ºc)
3. While grilling, apply honey and Jalen sweet soy sauce mixture on the chicken wings. Apply every time the chicken wings are flipped.
4. Grill for 10-20 minutes for each parts or until it is cooked. Serve with oyster sauce chicken rice.
